Selected fresh Pineapple variety are first wash thoroughly followed by visual inspection, peeling, coring, milling / crushing, juicing, standardizing, concentrating and finally spray drying. juice concentration and spray drying are carried out at low temperature to retain flavour, colour and nutrition values.
